SNICKERDOODLES
These were a lot different then I thought they would be. The cupcake itself was a lot fluffier (I was expecting more cookie like). And with the frosting, I didn't wait for the temperature to get to 230 degrees so it is not as stiff as I would like but it is a creamy match for the fluffy cake.
Overall, it is very tasty but not necessarily my favorite.
It could also be good with apple...like an Apple Pie cupcake....oh new idea? I think so!

Baking Challenge: Round 1
Ice Cream Cone Cupcakes
Martha aint got nothin on me!
These cupcakes were 100% hand-made and home-made. I used cage free eggs, organic milk, organic flour, baking sugar, unsalted butter, and pure vanilla extract. super simple, super tasty. Its vanilla and raspberry cake (two batches) with a swiss meringue butter cream frosting.
I filled the ice cream cones with the batter, baked them, scooped out some of the cake, filled it with real vanilla/chocolate ice cream and froze them.
Then I topped it with the frosting (decorated in various tips/scoops) and candy toppings to make it look like ice cream (IE what looks like the ice cream is really the frosting).
They were pretty good if I do say so myself, and I think my family would agree.
And it wasn't as difficult as I thought.
I am mos definitely ready for Round 2.....I'm thinking Snickerdoodles.....

New Edition: The Jen (Itto)
My friend Jen messaged me and suggested that I make a cupcake that looked like sushi. If any of you know me well, you know I lived in Japan for 3 years, and DUH-how could I not have thought of that!?
So in honor of her and her encouragement/ challenge...I present The Jen (itto)
Its Vanilla cake (all home made) with a Swiss Meringue Butter cream frosting, with vanilla ice cream filling, rice made from frosting and marshmallows cut in half, and fish made from Laffy Taffy and Airheads.
This is awesome!

The Baking Challenge
My family's close friend Kate Collins gave me an amazing Martha Stewart Cupcake Book. O-M-G I have entered Martha's shadow and have oh so much to learn.
But I consider myself up to the challenge and have vowed to start baking a new cupcake once a week.
All hand-made, all natural/organic/cage-free as I can find, and uniquely modified by yours truly with all the twisted powers of a rouge decorator.
This challenge will start next week, April 20th 2010.
What a great day to bake! I'm sure I can find someone to eat the testers....

Upcoming additions and designs
Thanks to this AMAZING book, I now have expanded my recipe collection from 8 kinds of cakes to 22, and my frostings from 7 to 18- and growing!
Honestly, for anyone who is interested, Whats New Cupcake and Hello Cupcake are the greatest books for learning how to bake and decorate at home and can help to give you a lot of inspiration for your own adventures at home. I highly recommend them.
